
AICHERMÜHLE – A FAMILY TRADITION SINCE 1589
Historical records make reference to the mill for the first time in the year 1461. Some 128 years later, in 1589, Rupertus Aicher purchased the mill.
It has remained in the Aicher family heritage ever since, passed down through the centuries by each generation to the next. This makes Aichermühle one of
the oldest family-owned mills in Central Europe.
Despite socio-political changes and upheavals through the ages, the mill has survived and even prospered, by unceasingly embracing technological advancements and staying apace with evolving quality standards.
Today, the Aichermühle is a medium-sized craftsman’s establishment staying true to our original beliefs and values: Quality, Consistency and Sustainability is our family maxim.
NATURAL AND NUTRITIOUS INGREDIENTS
Our Aichermühle milled grains are synonymous with premium products. This is reflected in the ingredients we use and how we source them.
Our natural, additive-free flours are made with grains locally sourced within Bavaria, Germany, from GMO-free certified farmers and farming cooperatives who are our trusted long-time partners.
This ensures product consistency and traceability as well as it reduces our environmental footprint.
ARTISANAL AND SUSTAINABLE MANUFACTURING
Our milling is an artisanal craftwork that conserves natural resources while maintaining the highest standards. Originally powered by water from a neighboring stream, the mill now relies on self-produced solar power to lower our carbon footprint.
To ensure our products have stable quality and baking properties, we control carefully the grain mix and use gentle grinding which involves up to 16 different steps. This helps to preserve the rich nutrition in the flours. Regular quality checks are performed in our in-house lab.
